The first ever gluten-free, nut-free, vegan, and grain-free sourdough bread made with almost all organic regional flour and ingredients- We use organic buckwheat sourced from upstate New York for this very special bread, regional pepitas from the finger lakes, and all organic inclusions like flax, chia, sunflower seeds, and flax meal. It's gluten-free AND grain-free as buckwheat is classified in the seed family, not a grain. (even though it has the word "wheat" in it)
We feed a unique sourdough starter (her name is Betty Buckwheat) with the organic buckwheat flour. The Birkett Mills in upstate NY mills organic buckwheat to our specifications, which is lighter than traditional buckwheat so the color is not dark, and the flavor is not as earthy as traditional buckwheat.
The result is a hearty loaf, with high fiber, and a light, nutty flavor.
We recommend this bread to be kept in the refrigerator for up to a week, then sliced and frozen. Toast to eat!
